The Bee's Balm

THE BEE'S BALM

INGREDIENTS:

  • 2 oz. @empress1908gin
  • 0.75 oz. Lemon juice
  • 0.5 oz. Honey syrup
  • 4 Bee Balm leaves Muddled in lemon juice & then discarded.


Honey foam

  • 4 oz. Coconut lemongrass tea @pinkyuptea (brewed and cooled to room temp)
  • 2 oz. honey syrup
  • 0.5 oz. Lemon juice
  • 2 oz. Egg whites
  • 2 iSi chargers

DIRECTIONS:

  • Combine the first three ingredients in a shaker with ice. Shake to chill. Strain into a coupe glass. Using an iSi whipper, express foam on top. Garnish with Bee Balm.
  • For the honey foam: Brew tea according to directions. Allow to cool to room temperature. Combine ingredients in iSi whipper. Charge with 1 charger. Shake for 10 seconds. Charge again.
